Durum wheat Cavatelli Russello from Terre e Tradizioni is a pasta made from durum wheat semolina Russello from organic farming, an ancient wheat rediscovered by us in recent years and grown in the central area of Sicily. It has a gluten index of less than 55% which differentiates it from modern grains with indexes above 90%. A cooking time of 8 to 10 minutes is recommended. May contain traces of soy and molluscs.
