Orecchiette with Russello durum wheat from Terre e Tradizioni is pasta made from organic Russello durum wheat semolina, an ancient wheat rediscovered by us in recent years and grown in the central area of Sicily. It has a gluten index of less than 55% which differentiates it from modern grains with indexes of over 90%. A cooking time of 9 to 11 minutes is recommended. May contain traces of soy and molluscs.
