Vitamin B1 is also commonly known as Thiamine. It is a natural vitamin found in a variety of fruits at suitable levels. However in many fruits such as Rhubarb, raspberry, and strawberry there is very little. Since yeast need Thiamine for a healthy fermentation it is wise to add a small amount to the must. The dosage rate is 1 - 2 tablets per gallon. Do not over do this as excess B1 will leave you with a Marmite taste in your finished wine. Thiamine is also destroyed by sulphite. So if you have had to do a heavy sulphiting to kill wild yeasts you may need to add a bit more.
